MADE IN BRIGHTON'S NORTH LAINE
The "Lab" is at the heart of everything we do. We have a team of 3 fantastic chefs who are passionate about everything they produce; from creating award winning gelato and sorbetto using the traditional Italian style method to making freshly made waffles and crepes, homemade cakes, brownies and desserts.
Since we opened our doors in March 2012 we have made over 200 different flavours
When we're not too busy we are always working in the Lab on new and exciting
concoctions to tickle the taste buds.
Our organic milk and cream is delivered each day in the very early hours of the morning from the Goodwood Estate dairy. Our chefs then pasteurise our base mix and churn the gelato in our batch freezers. We use fresh fruit & fruit pastes in our
gelato & sorbetto and a selection of soya, coconut, almond and oat milk, in our vegan and dairy free gelato.
During the winter months the team spend time creating handmade pastries and sweet delights with a range of bespoke desserts, brownies, muffins and cakes for our vegan and non vegan customers. Perfect with a scoop of gelato on the side and the perfect compliment to a freshly ground cup of coffee from our friends at
Cast Iron coffee roasters.
The Lab is a hive of activity developing new and exciting flavours but visitors are always welcome to take a look and see where the magic happens.
We offer over 20 constantly changing flavours ranging from Sea Salt Caramel, Dark Ecuadorian Chocolate, Blueberry, Banoffee Pie to Syrup Sponge Pudding and Jaffa Cake. Every week we introduce new guest flavours.
10 constantly changing sorbetto flavours the majority of which the majority are vegan friendly. Award winning pink grapefruit, lychee & rose, orange & mint and pear & parmesan to name a few.
We are proud to be an Award Winning producer of dairy free gelato. We use a variety of different nut and oat based gluten free milks to compliment the flavours we make. It is our mission to make our vegan friendly flavours taste as good if not better than our milk based gelato with a creamy texture and
Our waffles are freshly made to order
and ready to serve in 3 minutes.
Try our delicious bacon and maple syrup breakfast waffle or build your own creation from our range of fresh fruit, fruit compote, homemade
sauces and toppings. We are also pleased to offer vegan waffles to our customers.
Our crepes are fresh and fast to make. Prepared in minutes using natural ingredients. Great on their own with a dusting of icing sugar or topped with banana and drizzled in Nutella. The choice is yours.
We offer a selection of indulgent gelato desserts. You can choose from the classic Knickerbocker Glory, Hot Fudge Sundae, Chocolate Fudge Brownie and the Banana Split. We can also mix up the flavours to create your own bespoke dessert.

When we are not busy making gelato our chefs produce a range of homemade cakes and pastries; great with a scoop of gelato on top and the perfect accompaniment to a freshly ground cup of coffee or a cosy hot chocolate. Our croissants and pain au chocolat are supplied by are friends at the Real Patisserie.
